Toasted Sesame Ginger Salad

Toasted Sesame Ginger Dressing:
- ¼ cup toasted sesame oil
- ¼ cup peanut oil
- 1/3 cup rice vinegar
- ¼ cup soy sauce
- ¼ cup honey
- 1 Tablespoon lime juice (or half a lime)
- ½ teaspoon Sriracha sauce
- 3 cloves of garlic, minced
- 1 Tablespoon fresh ginger, minced
Combine all ingredients and blend until smooth (or use an immersion blender, either way, pulse it until it’s very smooth.
Salad:
- 1 small head of cabbage or ½ a large
- 3 carrots
- 1 bunch of green onions
- 1/3 cup packed Cilantro leaves
- Chow Mein or Wonton noodles
Thinly slice cabbage and then chop into 2 inch segments
Using a vegetable peeler, peel the carrots and then chop into 2 inch segments
Thinly slice green onions, using white and lower light green parts of the onion only
Pick cilantro from stem, leave leaves whole
Combine all ingredients in a bowl
When ready to serve, add Toasted Sesame Ginger dressing – just enough to coat. You will have leftover dressing, which will keep for a week in the fridge, but you won’t have it that long…use it with left over chicken, shrimp, veggies…
Top with Chow Mein or Wonton noodles
