Candied Bacon. Two things that kids love are candy and bacon.

Recently a friend of mine was asking for Christmas morning breakfast ideas. I always just make a simple fritatta or waffles. Nothing too fancy, but there must be bacon. Even when I was a vegetarian, I craved bacon. Afterall, it is the candy of meats. Here is the yummiest and most decadent way to make bacon that I know.

Ok, so this is not the healthiest thing you will eat all year but,  you really only need a little taste to feel super-satisfied. My son said, "It's candy and it's bacon -- Kids can't resist it!"

Here's how to make it:

Preheat oven to 350 degrees.

Take apart a package of bacon and drop the strips into a bowl. Toss with a couple shakes of ground pepper and about a half a cup of brown sugar until the strips are coated.

Cover a jelly roll pan (cookie sheet with a rim all the way around) with aluminum foil. Place the strips of bacon flat on the pan. Not overlapping.

A package of bacon is about 16 strips, so you can do this in layers by putting a sheet of foil in between. But be aware that the bottom layer will cook faster so check that one during the cooking process. Place a sheet of foil on top.

Next, place another cookie sheet or lasagne pan on top. This weights it down and keeps the bacon flat while cooking. The weight helps the sugar seep in.

Now, pop it in the oven and make yourself a cup of coffee. In about 15 minutes, you should check the progress.

This is what it looks like when it's done. It will be wobbly and really hot. It has to cool before you eat it. But like a good sugar cookie, don't over cook it because they crisp up as they cool.

* You could try to use parchment paper instead of aluminum foil.
