This recipe is a healthy, delicious meal that my whole family loves. It’s great for a fancy meal, but only takes about 20 minutes to prepare.
Ingredients
» 2 tablespoons oil (avocado, coconut or olive)
» 2 cloves garlic, minced
» 1 red Serrano or Fresno pepper, diced (optional)
» 1/2 cup white wine (cooking or regular)
» 1 tablespoon butter
» 1/2 pound large shrimp, peeled, deveined, with tails intact
» 15 asparagus stalks cut into 1-inch pieces (I usually add more)
» 1 tablespoon lemon juice, or half of a lemon squeezed
» 2 cups fresh basil, thinly sliced
» Rice, quinoa or pasta
Directions
» Heat oil over medium high heat
» Add garlic and pepper and saute? for 1 minute
» Add wine and butter, bring to a boil and simmer for 2-3 minutes
» Add shrimp and asparagus and saute? until done, about 3-5 minutes
» Add lemon juice and basil and toss until basil is wilted
» Serve over rice, quinoa, or pasta
