Keep it Simple Sunday - Cinnamon Cookie Recipe

Is there anything that makes your house feel more warm and cozy than the smell of fresh-baked  cookies?

Simple Cinnamon Cookies

  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 2 sticks of butter
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

In a large bowl, sift flour, baking soda and cinnamon. Set aside.

In a medium bowl cream together the butter and brown sugar. Beat in the egg and vanilla until fluffy.

Combine wet and dry ingredients. I like to use a rubber spatula for this.

Put the dough in the refrigerator and turn the oven to 350 degrees.

When the dough is chilled, it is much easier to roll out. Just about when the oven is preheated, you should be ready to roll.

Take about 1/3 of the chilled dough at a time and roll it smooth until it is roughly 1/2 inch thick.

Cut out your shapes using cookie cutters, a knife or a water glass. Bake for roughly 10 minutes. I like to take them out just before they begin to brown. This makes them a little delicate until they cool, but keeps the cookies from being crumbly or too crunchy.

This cookie is the perfect snack to pack in a sack lunch. Paired up with orange slices, this makes a pretty sweet grown-up treat too!
