The weekend is almost here and Spring break is nipping at its heels. To celebrate, I have from Nathelle, two tasty treats for your family to enjoy!

First up, is a delicious Fruit Cocktail Torte. You can substitute fresh fruit with a touch of honey, but really liked the budget friendly and crazily bright can of fruit cocktail. Sometimes it’s really fun to throw caution to the wind and indulge in pre-made sugary sweetness. We are talking about dessert here.

Fruit Cocktail Torte

Sift together:

1 cup flour

1 cup sugar

1 tsp baking soda

½ tsp salt

Beat one egg with a fork. Add a No. 300 can (conversions below) of fruit cocktail, drained. Add flour mixture slowly. Pour into a greased 8 x 12 inch pan.

Sprinkle over top:

1 cup brown sugar

½ cup finely chopped nuts

Bake at 350 degrees for 35-40 minutes. Serve with vanilla sauce, whipped cream or ice cream.

Were you a little thrown by the No. 300 can measurement? I was, so I called Grandma Shirley who informed me that anyone who could cook worth a lick new all the can sizes. They were the standards of the day.  Here is a conversion chart for you that might prove handy if you are trying to preserve some of your own heirloom recipes:

For a decadent afternoon cookie snack Nathelle submitted these wonderful crunchy and coconut-y cookies. I substituted ¾ cups butter flavor Crisco for the Fluffo

Wheatie Cookies

Cream together:

1 cup Fluffo

1 cup brown sugar

1 cup white sugar

Then add:

2 eggs

1 tsp vanilla

1 tsp baking soda

½ tsp salt

½ tsp baking powder

2 cups flour

4 cups crushed Wheaties

1 cup nuts

1 cup shredded coconut

Drop by teaspoonfuls on a greased cookie sheet. Bake at 395 degrees for approx. 8 minutes. Take care to not overbake. They will look soft but will harden as they cool.
