In the first entry about Grandma Shirley's Bridge Club Recipes, I asked readers for recipe requests and questions for the Bridge Club. It was heartening to think we could fill a hole in Heidi's cookbook. Here's what she wrote.

"This may sound like a strange request - but my grandma passed without ever passing down her borscht (cold beet soup) recipe. Hers was meatless - just beets and greens. Here's hoping that there is some German or Polish heritage in the Bridge Club and that one of them may have a recipe for it!!" ~ Heidi

Grandma Shirley herself was on the case immediately and here's what she came up with.

The best borscht I ever had was in British Columbia. Here it is:

Grandma Shirley's Borscht

19 oz can diced beets

2 cups buttermilk 2 cups cold chicken stock OR 2 vegetable bouillon cubes in water 2-3 hard-boiled eggs, chopped 1 medium cucumber, peeled, sliced, slices quartered 3-4 green onions OR chives, chopped 2 tbsp chopped dill salt and pepper

lemon juice

Combine all ingredients in a bowl.  Place in refrigerator to chill. Garnish with a dollop of sour cream or Greek yogurt and a few sprigs of fresh dill and chives. Pretty and palatable. Enjoy!
