Easiest Peanut Butter Cookies

I am a lazy baker. Primarily, because I am not a talented baker. I make coffee cake with pancake mix so when I was craving peanut butter cookies I thought to myself, why not? The thing about pancake mix is that it has all of the baking soda or baking powder in it already - and that is what I usually screw up.

  • 1/2 Cup Peanut Butter
  • 1/8 Cup Butter
  • 1/2 Cup Sugar
  • 1/4 Cup Boiling Water
  • 1 Cup Pancake Mix

Cream together peanut butter, butter and sugar. Add boiling water and mix until smooth. Stir in pancake mix.

Roll into small balls and drop into a bowl of sugar. place on cookie sheet un-sugared  side down as burnt sugar smells awful. Make the traditional criss-cross fork imprints.

Bake 8-10 minutes at 375 or 400 degrees. Be careful to not over bake. You know your oven better than I do.

Makes about 12 large cookies. Let cool a little before you try to remove from pan (I stick the cookie sheet into the freezer for about 2 minutes) or they will fall apart. I barely even got to eat one. My troops descended on them like a swarm of vultures. Maybe you should make a double batch.
